It’s the first thing to disappear from the table, the dish everyone asks you to bring, and the one you find yourself sneaking bites of while you are supposedly just ‘checking on it.’

  • 2 tablespoons water
  • 1 cup sour cream
  • 4 oz cream cheese, softened
  • 2 large, ripe avocados
  • 1 tablespoon lime juice
  • 1/4 cup finely chopped red onion
  • 1 small Roma tomato, seeded and diced
  • Salt and a pinch of cumin to taste
  • 1 cup chunky salsa
  • 2 cups shredded Mexican blend cheese (or cheddar and Monterey Jack)
  • 1 cup shredded iceberg lettuce
  • 1/2 cup sliced black olives
  • 1/2 cup diced Roma tomatoes
  • 1/4 cup chopped green onions
  • Fresh cilantro for garnish (optional)
  • For the Homemade Taco Seasoning (optional):
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Prep the Bean Base: In a small bowl, mix the refried beans with 1 tablespoon of taco seasoning and 2 tablespoons of water. Stir until smooth and spreadable. Spread this mixture evenly across the bottom of your 9×13 dish.
  2. Make the Creamy Layer: In a separate bowl, beat the softened cream cheese with an electric mixer or a sturdy fork until it’s smooth. Add the sour cream and the remaining taco seasoning (or about 1 tablespoon of your homemade mix). Mix until fully combined and fluffy. Spread it gently over the bean layer.
  3. Whip Up the Guacamole: Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Add the lime juice and mash with a fork until you reach your desired consistency—I like mine a little chunky. Fold in the red onion, diced tomato, and a pinch of salt and cumin. Spread this layer over the sour cream mixture.
  4. Add the Salsa: Spoon the salsa over the guacamole. Don’t spread it too aggressively, or you’ll mix the layers. Just dollop it on and gently smooth it out with the back of a spoon.
  5. Cheese, Please: Sprinkle the shredded Mexican blend cheese evenly over the salsa.
  6. The Crunchy Toppings: Layer on the shredded lettuce, then the black olives, diced tomatoes, and green onions.
  7. Final Touch: Garnish with fresh cilantro if you’re using it. Cover the dish with plastic wrap and refrigerate for at least 30 minutes before serving.

Notes

For a stable sour cream layer, use cream cheese. Let the dip chill for at least 30 minutes before serving to meld flavors. Use sturdy, wide tortilla chips (scoop-style recommended). To prevent guacamole from browning, press plastic wrap directly onto its surface before adding next layers. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Not recommended for freezing.
