  • 1 cup (240ml) buttermilk, room temperature
  • 1 cup (240ml) strong hot coffee
  • ½ cup (120ml) vegetable oil
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (226g) unsalted butter, softened
  • 4 cups (480g) powdered sugar, sifted
  • 34 tablespoons (45-60ml) heavy cream
  • 1 ½ teaspoons vanilla extract
  • Pinch of salt
  • ½ cup (about 85g) dark chocolate melting wafers
  • Small chocolate spiders (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line muffin pan with 18-20 paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt for about 20 seconds.
  3. In a separate bowl, whisk together buttermilk, hot coffee, vegetable oil, eggs, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and whisk gently until just combined. Batter will be thin.
  5. Fill each liner about two-thirds full with batter.
  6. Bake for 18-22 minutes, rotating pan halfway through. Cupcakes are done when a toothpick inserted into the center comes out with a few moist crumbs.
  7. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. For frosting: Beat softened butter with an electric mixer on medium speed until smooth and creamy, about 2 minutes.
  9. Add sifted powdered sugar one cup at a time, beating on low after each addition.
  10. Add heavy cream, vanilla extract, and salt. Beat on medium-high for 3-4 minutes until light and fluffy.
  11. Pipe frosting onto cooled cupcakes using a piping bag or zip-top bag with corner snipped. Smooth tops if needed.
  12. Refrigerate frosted cupcakes for 15 minutes to firm up frosting.
  13. Melt dark chocolate wafers in a microwave-safe bowl in 20-second intervals, stirring between each, until smooth. Let cool 2-3 minutes.
  14. Transfer melted chocolate to a small piping bag or zip-top bag with tiny corner snipped.
  15. Pipe three concentric circles on each frosted cupcake, starting from center outward.
  16. Immediately use a toothpick to drag lines from center through circles toward edge, creating web pattern. Wipe toothpick clean after each drag.
  17. Place a chocolate spider in the center of each web. Let chocolate set for about 10 minutes before serving.

Notes

For best results, chill frosted cupcakes before piping the web to prevent bleeding. The coffee enhances chocolate flavor without adding coffee taste. Use a zip-top bag if you don’t have a piping bag. Work in batches when piping chocolate to prevent it from thickening.
