Easy Adorable Black Cat Halloween Sugar Cookies

These adorable black cat sugar cookies are soft, deeply chocolaty, and decorated with simple royal icing. They’re perfect for Halloween parties and require no chill time for the dough.

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour, spooned and leveled
  • ½ cup black cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 cups powdered sugar, sifted
  • 2 tablespoons meringue powder
  • 3 to 4 tablespoons warm water
  • Yellow gel food coloring
  • Black food coloring (optional)

Instructions

  1. Cream the butter and sugar together until light and fluffy, about 3 minutes.
  2. Beat in the egg and vanilla extract until combined.
  3. In a separate bowl, whisk together flour, black cocoa powder, baking powder, and salt.
  4. Gradually add dry ingredients to wet mixture, mixing on low until dough comes together.
  5. Roll dough out to ¼-inch thickness on a lightly floured surface.
  6. Cut into cat shapes using a 3-inch cat cookie cutter, dipping cutter in flour between cuts.
  7. Place shapes on parchment-lined baking sheets, leaving 2 inches between each. Chill for 10 minutes if dough is warm.
  8. Bake at 350°F (175°C) for 8 to 10 minutes, until edges are set but centers are soft.
  9. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. Make royal icing: whisk powdered sugar and meringue powder, add warm water until thick and glossy. Divide and color one portion black and one yellow.
  11. Pipe black icing outline around each cookie, then fill in center. Let dry 30 minutes.
  12. Pipe yellow eyes, add black pupils, pipe whiskers and nose. Let dry completely, about 2 hours.

Notes

For best results, do not overmix dough. Black cocoa makes it hard to judge doneness; set timer for 8 minutes and check edges. Royal icing dries quickly; keep covered with a damp paper towel. Cookies taste even better the next day.
