Instructions

  1. Preheat your oven to 325°F (160°C). Line your 9×9 pan with parchment paper, leaving an overhang on two opposite sides.
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and salt. Pour the melted butter over the mixture and stir with a fork until every crumb is moistened. Dump the mixture into the prepared pan and press it down firmly using the bottom of a measuring cup or a flat glass. Bake for 10 minutes, then set it aside to cool while you make the filling.
  3. In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy—about 2 minutes. Scrape down the sides and the bottom of the bowl. Add the sugar and beat for another minute until well combined. Add the eggs one at a time, beating on low speed after each addition until just incorporated. Use a butter knife or a skewer to gently swirl the two together. You don’t want to fully combine them—just create a marbled effect. Leave about ½ inch of plain cheesecake around the edges.
