Wholesome One-Bowl Banana Bread: Easy No-Mixer Recipe

This easy one-bowl banana bread uses wholesome ingredients like whole wheat flour and coconut sugar. It’s moist, delicious, and comes together without a mixer for a simple, satisfying treat.

  • 3 large ripe bananas, mashed (about 1 ½ cups)
  • ⅓ cup melted coconut oil (or any neutral oil like avocado or grapeseed)
  • ½ cup coconut sugar (or brown sugar)
  • ¼ cup plain Greek yogurt (use dairy-free if needed)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract (pure)
  • 1 ½ cups whole wheat flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon (optional)
  • ½ cup chopped walnuts or dark chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly grease the paper with oil.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth (a few small chunks are fine).
  3. Add the melted coconut oil, coconut sugar, Greek yogurt, eggs, and vanilla extract to the mashed bananas. Whisk until well combined and smooth.
  4. Sprinkle the whole wheat flour, baking soda, baking powder, salt, and cinnamon over the wet mixture. Fold with a spatula or whisk until just combined (a few lumps are okay). Do not overmix.
  5. If using walnuts or chocolate chips, gently fold them in. Reserve a handful to sprinkle on top.
  6. Pour the batter into the prepared loaf pan. Spread evenly with a spatula. Tap the pan on the counter a couple of times to release air bubbles. Sprinkle reserved walnuts or chocolate chips on top.
  7. Bake for 50 to 60 minutes, starting to check at 50 minutes. The bread is done when a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil after 40 minutes.
  8. Let the bread cool in the pan on a wire rack for 15 minutes. Then lift it out using the parchment paper overhang and transfer to the rack to cool completely before slicing.

Notes

Use very ripe bananas (brown spots or almost black) for best sweetness and moisture. Do not overmix the batter to avoid dense bread. Let the bread cool completely before slicing to prevent a gummy texture. The flavors develop overnight, making it even better the next day.
