Instructions

  1. Cream the butter and sugars: In a medium mixing bowl, combine the softened butter, granulated sugar, and packed brown sugar. Beat with an electric hand mixer on medium speed for about 2 minutes, until light, fluffy, and pale in color. Scrape down the sides of the bowl.
  2. Add the egg yolk and vanilla: Drop in the egg yolk and add the vanilla extract. Beat on low speed until just combined, about 15 seconds. The mixture may look slightly curdled.
  3. Whisk the dry ingredients: In a small separate bowl, whisk together the flour, baking soda, and salt.
  4. Combine wet and dry ingredients: Add the flour mixture to the butter mixture. Mix on low speed or fold with a spatula until just combined. Do not overmix.
  5. Fold in the chocolate chips: Add the chocolate chips and fold them in gently with a spatula until evenly distributed.
  6. Chill the dough (optional but recommended): Cover the bowl with plastic wrap and refrigerate for 15-20 minutes.
  7. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  8. Portion the dough: Use a cookie scoop or two spoons to portion the dough into 6 equal balls, each about 1.5 tablespoons. Place them on the prepared baking sheet, spacing about 3 inches apart.
