These tender soft brown butter chocolate chip cookies offer a perfect chewy texture with a deep, caramelized flavor from browned butter. They balance crisp edges with soft centers for a comforting, rich treat.

Ingredients

Scale
  • 1 cup (227g) unsalted butter, browned and cooled
  • ½ cup (100g) granulated sugar
  • 1 cup (200g) brown sugar, packed
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 ½ cups (312g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups (340g) semi-sweet chocolate chips

Instructions

  1. Place 1 cup (227g) unsalted butter in a medium saucepan over medium heat. Stir constantly with a heatproof spatula, watching closely as the butter melts, foams, and then begins to turn a deep golden brown with nutty aroma, about 5–7 minutes. Transfer the butter to a heatproof bowl to stop cooking and let cool for about 10 minutes until warm but not hot.
  2. In a large mixing bowl, combine ½ cup (100g) granulated sugar and 1 cup (200g) brown sugar. Pour in the warm browned butter and mix until combined. Add 2 large eggs, one at a time, beating well after each addition. Stir in 2 teaspoons pure vanilla extract until glossy and thick, about 5 minutes.
  3. In a separate bowl, whisk together 2 ½ cups (312g) all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt. Gradually add the dry ingredients into the wet mixture, folding gently with a spatula until just combined with no streaks of flour.
  4. Fold in 2 cups (340g) semi-sweet chocolate chips evenly throughout the dough.
  5. Cover the bowl with plastic wrap and chill the dough for at least 30 minutes to 1 hour (optional but recommended) to control spread and improve texture.
  6. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. Use a cookie scoop or tablespoon to drop rounded balls of dough about 2 inches apart.
  7. Bake for 10–12 minutes, or until edges are golden but centers still look slightly soft. Let cookies rest on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Use high-quality butter like Kerrygold for best flavor. Chilling dough improves texture and controls spread. Avoid overmixing to keep cookies tender. Pull cookies out when edges are golden but centers still soft to maintain chewiness. For gluten-free, substitute half or all flour with almond or gluten-free flour. Vegan options include vegan butter, flax eggs, and dairy-free chocolate chips.
