This recipe delivers tender, fall-off-the-bone ribs with a sticky BBQ glaze using an Instant Pot for quick and easy preparation. Perfect for busy weeknights or weekend cookouts, it combines pressure cooking and broiling for caramelized, flavorful ribs.

  • 23 pounds baby back or St. Louis style pork ribs, trimmed of excess fat
  • 2 tbsp brown sugar
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper (optional)
  • 1 cup water or apple juice
  • ½ cup BBQ sauce (gluten-free if needed)
  • 2 tbsp honey or maple syrup
  • 1 tsp Worcestershire sauce
  • 1 tsp apple cider vinegar

Instructions

  1. Remove the silver skin from the back of the ribs if not already done. Pat dry with paper towels.
  2. In a small bowl, combine brown sugar, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper if using. Mix well.
  3. Generously rub the dry rub all over the ribs on both sides. Let sit for 10-15 minutes or refrigerate up to 2 hours.
  4. Pour 1 cup of water or apple juice into the Instant Pot. Place the trivet inside and lay the ribs on top, curling if needed. Seal the lid and set valve to sealing.
  5. Pressure cook on high for 25 minutes for baby back ribs or 30 minutes for St. Louis style ribs. Allow a natural pressure release for 10 minutes, then quick release remaining pressure.
  6. While ribs cook, mix BBQ sauce, honey, Worcestershire sauce, and apple cider vinegar in a bowl to make the glaze.
  7. Transfer ribs to a foil-lined baking sheet. Brush ribs thickly with the BBQ glaze. Broil on high for 5 minutes, watch closely to prevent burning, flip ribs, glaze the other side, and broil another 3-5 minutes until caramelized and sticky.
  8. Let ribs rest for 5 minutes before slicing and serving.

Remove the silver skin for better flavor absorption and tenderness. Use gluten-free BBQ sauce for a gluten-free version. Watch ribs closely when broiling to prevent burning. Let ribs rest after broiling to keep juices locked in. If no broiler, finish ribs in a hot skillet or oven at 425°F for 10-15 minutes.
