  • 1 packet (1 oz) Ranch Dressing & Seasoning Mix
  • 1 packet (1 oz) Au Jus Gravy Mix
  • 1 stick (1/2 cup) unsalted butter
  • 68 pepperoncini peppers (plus 1/4 cup of the brine)
  • 2 tablespoons olive oil (optional, for searing)
  • Salt and black pepper (optional, to taste)

Instructions

  1. Prep the Roast (5 minutes): Take your chuck roast out of the fridge about 20 minutes before you start cooking. Pat it completely dry with paper towels. Trim off any large, hard pieces of fat, but leave a thin layer.
  2. Season the Meat (2 minutes): Season the roast generously on all sides with salt and black pepper. Remember, the seasoning packets are salty, so go easy.
  3. Sear the Roast (10 minutes): Heat your large skillet over medium-high heat. Add the olive oil and let it get shimmering hot. Carefully place the roast in the hot pan. Let it sear undisturbed for 3-4 minutes per side. Use your tongs to sear the edges as well.
  4. Transfer to Slow Cooker (2 minutes): Place the seared roast in the bottom of your slow cooker.
  5. Add the Seasonings (3 minutes): Sprinkle the ranch dressing mix and au jus gravy mix evenly over the top of the roast. Place the stick of butter right on top of the seasoning packets. Arrange the pepperoncini peppers around the roast. Pour in the 1/4 cup of pepperoncini brine.
  6. Deglaze the Pan (Optional but Recommended, 2 minutes): Pour about 1/4 cup of water or beef broth into the hot skillet you used for searing. Scrape up all those browned bits with a wooden spoon. Pour this flavorful liquid into the slow cooker.
  7. Cook Low and Slow (8 hours on LOW or 5 hours on HIGH): Put the lid on your slow cooker and cook on LOW for 8 hours, or on HIGH for 5 hours. The meat is done when it is fork-tender and shreds easily. Don’t open the lid during cooking.
  8. Shred and Serve (5 minutes): Once the roast is cooked, carefully transfer it to a cutting board. Use two forks to shred the meat, discarding any large pieces of fat. Return the shredded meat to the slow cooker and stir it into the delicious gravy. Let it sit for 5 minutes to soak up all that flavor. Serve hot over mashed potatoes, egg noodles, or rice.

Don’t skip the sear—it creates deep flavor. Use unsalted butter to control salt levels. For a thicker gravy, mix 2 tablespoons cornstarch with 2 tablespoons cold water and stir in during the last 30 minutes. Leftovers taste even better the next day.
