These mini cheeseburger sliders are quick, easy, and perfect finger food for kids’ birthday parties. Juicy beef patties with melted cheddar cheese on soft slider buns make a crowd-pleasing treat.

Ingredients

Scale
  • 1 lb (450 g) ground beef (80/20 for juiciness)
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • 12 mini slider buns or dinner rolls (soft and slightly sweet)
  • 6 slices cheddar cheese, halved (sharp or mild)
  • Butter, melted (for toasting buns)
  • Optional toppings: pickle slices, ketchup, mustard, shredded lettuce, thin tomato slices

Instructions

  1. In a large bowl, combine 1 lb ground beef with smoked paprika, garlic powder, onion powder, salt, and pepper. Mix gently but thoroughly by hand, avoiding overmixing. (5 minutes)
  2. Divide the meat mixture into 12 equal portions. Roll each into a ball, then flatten to about 2.5 inches in diameter and 1/2 inch thick. Make patties uniform for even cooking. (10 minutes)
  3. Heat a non-stick skillet or grill pan over medium-high heat until hot but not smoking. (2 minutes)
  4. Place patties in the pan with space between each. Cook for about 3 minutes on the first side until deep brown crust forms. Flip carefully, place half a slice of cheddar cheese on each patty, and cook another 2-3 minutes until cheese melts and internal temperature reaches 160°F (71°C). (6 minutes)
  5. While patties cook, lightly butter the insides of slider buns. Place on a baking sheet and toast in a preheated oven at 350°F (175°C) for about 5 minutes until golden and warm.
  6. Assemble sliders by layering each bottom bun with a cheesy patty, optional pickle, lettuce, tomato, and a dab of ketchup or mustard if desired. Cap with the top bun and serve warm.

Notes

Do not overmix the meat to keep patties tender. Use medium-high heat for a nice crust without drying out the patties. Add cheese after flipping and cover briefly to melt. Toast buns lightly with butter to prevent sogginess. Patties can be cooked ahead and reheated wrapped in foil to stay juicy.
