These Spooky Monster Eyeball Deviled Eggs are the perfect mix of fun and flavor. They look like they belong in a haunted house, but they taste like classic deviled eggs with a creepy twist.

  • 12 large eggs
  • 1/2 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 tablespoon pickle juice (dill, not sweet)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1 teaspoon paprika, plus more for garnish
  • 1 can (about 6 oz) pitted black olives
  • Red food coloring (optional, for bloodshot veins)

Instructions

  1. Boil the Eggs: Place the eggs in a single layer in a large pot. Cover with cold water by about an inch. Bring to a rolling boil over high heat. Once boiling, cover the pot, turn off the heat, and let it sit for 12 minutes.
  2. Ice Bath: While the eggs are sitting, prepare a bowl of ice water. When the timer goes off, transfer the eggs to the ice bath using a slotted spoon. Let them cool completely (about 10 minutes).
  3. Peel and Halve: Gently tap each egg on the counter to crack the shell, then roll it between your hands to loosen it. Peel under running cold water. Slice each egg in half lengthwise. Carefully pop out the yolks into a bowl.
  4. Make the Filling: To the yolks, add the mayonnaise, yellow mustard, pickle juice, salt, and pepper. Mash everything together with a fork until smooth and creamy. Taste and adjust seasoning.
  5. Prepare the ‘Eyeballs’: Arrange the egg white halves on a serving platter, cut-side up. Pat them dry with a paper towel. Lightly sprinkle a pinch of paprika over each white.
  6. Pipe the Filling: Spoon the yolk mixture into a piping bag or a zip-top bag with the corner snipped off. Pipe a generous swirl into each egg white cavity.
  7. Create the Pupils: Slice the black olives into rounds about 1/4-inch thick. Place one olive slice in the center of each yolk-filled egg. Press down gently.
  8. Add Creepy Details (Optional): Mix a tiny drop of red food coloring with a drop of water. Dip a toothpick into the mixture and draw tiny, jagged lines outward from the olive pupil. Let sit for 5 minutes to set.

Notes

Use older eggs for easier peeling. The filling can be made a day ahead; store in an airtight container in the fridge. Add olive pupils just before serving for best appearance. For a smoother filling, use a food processor.
