  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup ketchup
  • 1/4 cup tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon mustard (Dijon or yellow)
  • 1/2 cup beef broth or water
  • Salt and black pepper to taste
  • 12 slider buns or small dinner rolls (brioche buns recommended)
  • Butter, softened (for toasting the buns)
  • Optional: sliced pickles or cheese slices (cheddar or pepper jack)

Instructions

  1. Heat a skillet over medium heat and add a splash of oil or a small knob of butter. Sauté the finely chopped onion for 4-5 minutes until soft and translucent. Add minced garlic and cook for another 30 seconds until fragrant.
  2. Increase heat to medium-high and add the ground beef. Break it up with a spoon and cook until no pink remains, about 6-8 minutes. Drain excess fat if needed, leaving a bit for flavor.
  3. Stir in ketchup, tomato paste, Worcestershire sauce, mustard, and smoked paprika. Mix well to coat the beef evenly. Pour in beef broth and stir to loosen the sauce. Reduce heat to medium-low and simmer gently for 10-15 minutes, stirring occasionally until sauce thickens. Season with salt and pepper to taste.
  4. While the filling simmers, split the slider buns and spread softened butter on the cut sides. Toast them in a dry skillet or under a broiler for 1-2 minutes until golden and slightly crisp.
  5. Spoon a generous amount of sloppy joe filling onto the bottom half of each bun. Add optional cheese slices or pickles if desired, then top with the bun lids. Serve immediately while warm and messy.

Notes

Do not skip toasting the buns to prevent sogginess. Use ground beef with some fat for best flavor. Simmer sauce gently to avoid bitterness. Season gradually and taste as you go. You can swap beef for ground turkey, chicken, or plant-based crumbles. For gluten-free, use almond flour-based buns or lettuce wraps for low-carb option.
