  • 4 bratwurst sausages (about 1 lb / 450 g), fresh or pre-cooked
  • 14 oz (400 g) sauerkraut, drained but not rinsed
  • 1 medium yellow onion, thinly sliced
  • 2 garlic cloves, minced
  • ½ cup (120 ml) apple cider or beer
  • 1 tbsp olive oil or butter
  • Salt and freshly ground black pepper, to taste
  • 1 tsp caraway seeds (optional)
  • A handful of fresh parsley, chopped (optional)

Instructions

  1. Slice the onion thinly and mince the garlic cloves. Drain the sauerkraut well but do not rinse it. Pat the bratwurst dry with paper towels to help with browning. (Prep time: 5 minutes)
  2. Heat a large skillet over medium-high heat and add olive oil or butter. Let it get hot but not smoking.
  3. Add bratwurst links to the pan, spacing them out to avoid steaming. Cook for 4-5 minutes per side, turning gently until browned all over.
  4. Remove the bratwurst from the skillet and set aside.
  5. In the same skillet, add sliced onions and stir to coat with sausage drippings. Cook over medium heat, stirring occasionally, until onions soften and start to caramelize, about 7-8 minutes. Add minced garlic in the last 2 minutes.
  6. Stir in sauerkraut and caraway seeds if using. Cook for another 3 minutes to warm through and combine flavors.
  7. Pour in apple cider or beer to deglaze the pan, scraping up browned bits. Let the liquid bubble and reduce slightly.
  8. Return bratwurst to the skillet, nestling them into the sauerkraut mixture. Cover with a lid or foil, reduce heat to low, and simmer gently for 10 minutes.
  9. Remove from heat, sprinkle with fresh parsley if desired, and serve hot with mustard on the side.

Notes

Do not crowd the pan when browning bratwurst to ensure a good sear. Pat sausages dry before cooking. Use a good quality apple cider or beer for deglazing to enhance flavor. Simmer covered to keep bratwurst juicy. Taste before adding salt as sauerkraut is naturally salty. Leftovers store well for up to 3 days and reheat gently with a splash of broth or water.
