Rustic Nectarine Galette with Honey Almond Crust

A simple yet special rustic galette featuring juicy nectarines wrapped in a flaky honey almond crust, perfect for summer gatherings and easy homemade dessert.

  • 1 ½ cups (180g) all-purpose flour, sifted
  • ½ cup (50g) ground almonds (almond meal)
  • 10 tablespoons (140g) unsalted butter, cold and cubed
  • 2 tablespoons honey (mild-flavored, e.g., clover or wildflower)
  • 3 to 4 tablespoons ice-cold water
  • Pinch of salt
  • 4 to 5 medium ripe nectarines, thinly sliced (about 3 cups/450g)
  • 2 tablespoons granulated sugar
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon ground cinnamon (optional)
  • 2 tablespoons almond slices (optional, for sprinkling on top)
  • 1 large egg beaten with 1 tablespoon water (egg wash)
  • 1 tablespoon honey (for drizzling after baking)

Instructions

  1. In a large bowl, combine flour, ground almonds, and salt. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs with some pea-sized butter bits.
  2. Stir in honey, then gradually add ice-cold water, mixing gently until dough just comes together. Avoid overworking.
  3. Shape dough into a 6-inch disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. Toss sliced nectarines with sugar, lemon juice, and cinnamon if using. Set aside to macerate.
  5. Roll chilled dough on a lightly floured surface into a rough 12-inch circle about 1/8 inch thick.
  6. Transfer dough to a parchment-lined baking sheet. Pile nectarine filling in center, leaving a 2-inch border. Sprinkle almond slices over fruit.
  7. Fold edges of dough over filling, pleating as needed, leaving center exposed.
  8. Brush crust edges with egg wash.
  9. Bake at 400°F (200°C) for 35–40 minutes until crust is golden and nectarines are bubbling. Cover edges with foil if browning too fast.
  10. Remove from oven and immediately drizzle honey over warm galette. Cool on rack for at least 20 minutes before slicing.

Notes

Keep butter ice-cold to ensure a flaky crust. Chill dough thoroughly before rolling. If nectarines are very juicy, sprinkle 1 tablespoon cornstarch over fruit before folding crust to prevent soggy bottom. Cover crust edges with foil if browning too quickly. Let galette cool before slicing for best texture.
