Ingredients

Scale
  • 1 box yellow cake mix (about 15.25 oz / 432 g) or homemade yellow cake batter
  • Ingredients called for on cake mix box (usually eggs, oil, water)
  • 1 cup strawberry lemonade (freshly squeezed or store-bought, about 240 ml / 8 fl oz)
  • 1 cup fresh strawberries, chopped
  • 2 tablespoons granulated sugar (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 23 tablespoons milk or heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan thoroughly.
  2. Prepare the cake batter according to box instructions or your own recipe, mixing cake mix with eggs, oil, and water until smooth.
  3. Pour batter evenly into the prepared pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  4. Let the cake cool for about 10 minutes but keep it warm.
  5. Using a toothpick or skewer, poke holes about 1 inch apart all over the cake.
  6. In a bowl, mix strawberry lemonade with chopped strawberries and sugar until sugar dissolves.
  7. Pour the strawberry lemonade mixture evenly over the cake, focusing on the holes. Let soak for at least 30 minutes.
  8. While cake soaks, beat softened cream cheese and butter until smooth and creamy.
  9. Gradually add powdered sugar, beating well between additions. Add vanilla extract and milk or cream to adjust consistency.
  10. Spread frosting evenly over the soaked cake.
  11. Refrigerate the cake for at least 1 hour before serving.

Notes

Do not skip poking enough holes to ensure the strawberry lemonade soaks evenly. Let the cake cool slightly before poking to help it hold together. Gradually add powdered sugar to frosting to avoid sugar clouds. Use fresh strawberries for best flavor; frozen can be used if thawed and drained. For gluten-free, use gluten-free yellow cake mix. For dairy-free, substitute cream cheese and butter with dairy-free alternatives and use plant-based milk.
