Refreshing Peach Bellini Popsicles

These easy homemade prosecco popsicles combine ripe peaches and sparkling prosecco for a light, refreshing summer treat that’s quick to prepare and perfect for gatherings.

  • 4 large ripe peaches (peeled and pitted)
  • 1 cup (240 ml) prosecco
  • 23 tablespoons granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1/4 cup (60 ml) water (optional)
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Peel, pit, and roughly chop the peaches (about 4 large peaches).
  2. Place chopped peaches in a blender or food processor. Add 2 tablespoons sugar and lemon juice. Blend until smooth and silky, about 30-45 seconds. Add up to 1/4 cup water if mixture is too thick.
  3. Transfer peach puree to a mixing bowl. Slowly stir in 1 cup chilled prosecco and optional vanilla extract. Taste and add more sugar if needed.
  4. Pour mixture into popsicle molds, leaving space at the top. Tap molds gently to remove air bubbles.
  5. Insert sticks and freeze for at least 6 hours or overnight until solid.
  6. To unmold, run warm water over molds for 10-15 seconds and gently pull sticks. Serve immediately.

Notes

Use ripe but slightly firm peaches for best texture. Lemon juice prevents browning and brightens flavor. Adjust sugar to taste, remembering freezing dulls sweetness. For a lighter version, replace some prosecco with sparkling water. Freeze slowly to avoid icy texture. To create layered popsicles, freeze half the mixture first, then add remaining mixture and freeze completely.
