  • 1 cup (240ml) tequila blanco
  • 1/4 cup (60ml) triple sec or orange liqueur
  • 1/4 cup (60ml) fresh lime juice (about 23 limes)
  • 1/4 cup (60ml) simple syrup (equal parts sugar and water)
  • 2 cups (approx. 240g) ice cubes
  • Salt (optional, for rimming glasses)

Instructions

  1. Prepare simple syrup by combining 1/4 cup sugar with 1/4 cup water in a small saucepan. Heat gently, stirring until sugar dissolves. Cool completely before use.
  2. Juice the limes by rolling them on the counter and extracting about 1/4 cup fresh lime juice. Strain out seeds.
  3. In a blender, combine frozen strawberries, tequila, triple sec, fresh lime juice, simple syrup, and ice cubes. Blend starting on low speed, gradually increasing to high until smooth and slushy (about 1-2 minutes).
  4. Check texture and sweetness. If too thick, add a splash of water or more lime juice; if too thin, add more ice cubes and blend briefly. Adjust sweetness with more simple syrup if needed.
  5. Rub a lime wedge around the rim of each glass and dip in coarse salt if desired.
  6. Pour the slushie into glasses, garnish with a strawberry slice or lime wedge, and serve immediately.
