Refreshing Creamy Peach Melba Popsicles

These creamy and fruity popsicles blend luscious peach flavor with a smooth base and a tangy raspberry swirl, perfect for a refreshing summer treat.

  • 3 large ripe peaches, peeled and sliced
  • 1 cup fresh raspberries (or thawed frozen raspberries)
  • 1 cup plain full-fat Greek yogurt
  • 1/2 cup heavy cream (or coconut cream for dairy-free)
  • 3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice

Instructions

  1. Peel and slice the peaches into chunks. Thaw and drain frozen raspberries if using. (About 10 minutes)
  2. Puree the peach chunks in a blender until smooth but slightly textured. Pour into a large mixing bowl. (5 minutes)
  3. Rinse the blender, then puree the raspberries until smooth. Strain through a fine mesh sieve to remove seeds if desired. Set aside. (10 minutes)
  4. In another bowl, whisk together Greek yogurt, heavy cream, honey or maple syrup, vanilla extract, and lemon juice until smooth and combined.
  5. Gently fold the peach purée into the creamy mixture, leaving some streaks for texture and visual appeal.
  6. Spoon the creamy peach mixture into popsicle molds, filling halfway. Add a spoonful of raspberry purée on top, then swirl gently with a toothpick or skewer.
  7. Insert popsicle sticks and freeze for at least 6 hours or overnight until solid.
  8. To unmold, run warm water over the outside of the molds for a few seconds and gently pull out the popsicles. Serve immediately.

Notes

Do not over-swirl the raspberry purée to maintain a marbled effect. Use ripe peaches for best flavor. Straining raspberry purée is optional but recommended to remove seeds. Freeze for at least 6 hours. Run warm water on molds before unmolding to prevent breakage. For dairy-free, substitute Greek yogurt and heavy cream with coconut yogurt and coconut milk.
