  • 8 small corn or flour tortillas
  • 1 cup shredded green cabbage
  • 1 ripe avocado, mashed
  • 2 tablespoons sour cream or Greek yogurt
  • 1 lime, cut into wedges
  • Fresh cilantro leaves, chopped (optional)

Instructions

  1. Rinse the shrimp under cold water and pat dry thoroughly with paper towels. In a medium bowl, toss the shrimp with olive oil or melted butter, minced garlic, smoked paprika, chili powder (if using), salt, and pepper. Make sure every shrimp is coated well. (About 5 minutes)
  2. In a small bowl, mash the ripe avocado with the sour cream or Greek yogurt until smooth. Squeeze in about 1 teaspoon of lime juice and stir. Season lightly with salt. Set aside. (5 minutes)
  3. Heat a dry skillet over medium heat. Warm each tortilla for about 20-30 seconds per side until soft and pliable. Keep them wrapped in a clean kitchen towel to stay warm. (3-4 minutes)
  4. Turn the pan to medium-high heat. Add the shrimp mixture, spreading it out in a single layer. Cook for 1.5-2 minutes per side until pink and opaque with a slight char. Don’t overcrowd the pan—cook in batches if needed. Remove shrimp and set aside. (5-7 minutes)
  5. Lay out the warm tortillas. Add a small handful of shredded cabbage to each, then top with the garlic shrimp. Drizzle or dollop the avocado crema over the shrimp. Garnish with fresh cilantro and a squeeze of lime juice. (3 minutes)

Notes

Use almond or coconut flour tortillas for a gluten-free option. Thaw frozen shrimp completely and pat dry before cooking. Avoid burning garlic by adding it just before shrimp hits the pan. Warm tortillas in a dry pan and keep wrapped in a towel to stay soft. For extra brightness, toss cabbage with lime juice and salt before assembling. Marinate shrimp up to 30 minutes but not longer to avoid cooking from acid.
