A quick and easy flatbread pizza topped with creamy cottage cheese and herbs, perfect for a fuss-free snack or light meal with crispy edges and gooey cheese pockets.

  • 1 plain or lightly seasoned flatbread (6 to 8 inches in diameter)
  • 1/2 cup (120g) small-curd, low-fat cottage cheese
  • 1 teaspoon minced garlic or 1/4 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon extra virgin olive oil
  • Salt and pepper to taste
  • Optional toppings: halved cherry tomatoes, sliced olives, fresh spinach

Instructions

  1. In a mixing bowl, combine cottage cheese, garlic, oregano, basil, salt, pepper, and Parmesan cheese. Stir until well mixed.
  2. Heat a non-stick or cast iron skillet over medium heat. Add olive oil and swirl to coat.
  3. Place the flatbread on the pan. Quickly spread the cottage cheese mixture evenly over the flatbread, leaving a small border around the edges. Add optional toppings if desired.
  4. Cook the flatbread undisturbed for 3-4 minutes until the bottom is golden brown and crispy.
  5. Gently flip the flatbread and cook for another 2-3 minutes until the other side is toasted and the cheese mixture is lightly browned and bubbling. Add a drizzle of olive oil around edges if needed.
  6. Transfer the flatbread to a plate and let rest for 1 minute before slicing and serving.

Notes

Drain excess liquid from cottage cheese before mixing to avoid soggy flatbread. Cook one flatbread at a time for even crispiness. Use medium to medium-high heat to prevent burning. Thinly spread cheese mixture for best texture. Optional toppings can be added before cooking or after for fresh herbs.
