A quick and easy baked brie wrapped in flaky puff pastry, topped with a homemade cranberry pecan honey. Ready in just 20 minutes, this indulgent appetizer is perfect for any occasion.

Ingredients

Scale
  • 1 sheet puff pastry, thawed
  • 1 small wheel brie cheese (about 8 ounces or 225g)
  • 1/3 cup dried cranberries (about 50g)
  • 1/3 cup pecans, roughly chopped (about 40g)
  • 3 tablespoons honey (about 60ml)
  • 1 egg, beaten with 1 tablespoon water
  • Flaky sea salt, for finishing (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Make the cranberry pecan honey: In a small bowl, combine the dried cranberries, chopped pecans, and honey. Stir until everything is well coated. Let it sit while you prepare the rest.
  3. Prepare the puff pastry: On a lightly floured surface, roll out the thawed puff pastry sheet into a 12-inch (30cm) square.
  4. Place the brie in the center of the pastry square.
  5. Top the brie with the cranberry pecan honey mixture.
  6. Wrap the pastry around the brie: Bring the corners of the pastry up and over the brie, pinching the seams together to seal completely.
  7. Brush the entire outside of the pastry with the beaten egg wash.
  8. Score the pastry: Use a sharp knife to make a few small slits on top of the pastry to let steam escape.
  9. Bake for 18-20 minutes, until the pastry is puffed and deep golden brown.
  10. Rest for 5 minutes before serving.
  11. Finish with a sprinkle of flaky sea salt right before serving.

Notes

Keep everything cold for best results. Don’t overstuff the pastry. Let it rest for 5 minutes before cutting to prevent the cheese from flooding out. Can be assembled up to 24 hours in advance (without egg wash) and refrigerated.
