A quick and easy apple cider mimosa bar that comes together in under five minutes with just three ingredients. Perfect for weeknights, brunch, or any fall gathering, this DIY bar lets guests customize their own drink with a 2:1 cider-to-wine ratio and optional garnishes.

  • 2 cups (480 ml) apple cider, chilled
  • 1 bottle (750 ml) dry sparkling wine or prosecco, chilled
  • 1 teaspoon vanilla extract
  • Optional garnishes: fresh thyme sprigs, cinnamon sticks, thin apple slices, pomegranate seeds, maple syrup or honey

Instructions

  1. Chill the apple cider and sparkling wine in the refrigerator for at least 2 hours before serving.
  2. In a pitcher or large measuring cup, combine 2 cups of cold apple cider and 1 teaspoon of vanilla extract. Stir gently to incorporate.
  3. Set up the bar: arrange glasses on a tray, place the pitcher of cider mixture on one side and the bottle of sparkling wine on the other. Arrange garnishes in small bowls.
  4. Let guests build their own: fill a glass about one-third full with the cider mixture, then top with sparkling wine. A 1:2 ratio (cider to wine) is recommended, but guests can adjust to taste.
  5. Add garnishes as desired, such as a cinnamon stick, pomegranate seeds, or a sprig of thyme.
  6. Serve immediately. Mimosas do not sit well; the bubbles fade quickly.

Notes

For a non-alcoholic version, swap sparkling wine for sparkling cider or club soda with a splash of white grape juice. The cider mixture can be made up to 5 days ahead and stored in the refrigerator. Do not mix the wine and cider until ready to serve to keep the bubbles fresh.
