Quick 15-Minute Garlic Shrimp Pasta with Cherry Tomatoes

A fast and flavorful pasta dish featuring juicy shrimp, garlic, and sweet cherry tomatoes, perfect for busy weeknights.

Ingredients

  • 8 ounces (225g) spaghetti or linguine
  • Salt, for pasta water
  • 1 pound (450g) large shrimp, peeled and deveined
  • 3 tablespoons olive oil (extra virgin)
  • 4 cloves garlic, minced
  • 1 pint (300g) cherry tomatoes, halved
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • Juice of half a lemon
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil (about 4 quarts).
  2. Add spaghetti or linguine and cook until al dente according to package instructions.
  3. While pasta cooks, heat olive oil in a large skillet over medium-high heat.
  4. Add minced garlic and sauté for about 30 seconds until fragrant but not browned.
  5. Add shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque.
  6. Add halved cherry tomatoes and red pepper flakes (if using), cooking until tomatoes blister and soften, about 2-3 minutes.
  7. Drain pasta, reserving some pasta water.
  8. Add pasta to the skillet with shrimp and tomatoes, tossing to combine.
  9. Add lemon juice and chopped parsley, stirring well. If needed, add reserved pasta water to loosen the sauce.
  10. Season with salt and freshly ground black pepper to taste.
  11. Serve immediately, optionally topped with grated Parmesan or Pecorino Romano.

Notes

Use almond flour pasta for a gluten-free version. A sprinkle of grated Parmesan or Pecorino Romano is optional but adds indulgence. Avoid burning garlic by keeping an eye on heat. A garlic press can save time but finely chopping works well too.
