  • 2 tablespoons granulated sugar
  • 2 cups fresh strawberries, hulled and sliced
  • 2 cups fresh blueberries
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant vanilla pudding mix
  • Fresh mint leaves (optional, for garnish)
  • Extra berries for the top layer
  • White chocolate shavings (optional, for garnish)

Instructions

  1. Wash and dry the berries thoroughly. Hull and slice the strawberries into even pieces, about 1/4 inch thick. Leave the blueberries whole.
  2. Sprinkle 1 tablespoon of sugar over the strawberries and 1 tablespoon over the blueberries. Add the lemon juice and vanilla extract, then gently toss each bowl. Let them sit for 10 minutes to macerate.
  3. Pour the cold heavy cream into a mixing bowl. Add the powdered sugar, vanilla extract, and instant pudding mix. Start mixing on low speed, then gradually increase to medium-high. Whip until stiff peaks form, about 3-4 minutes.
  4. Cut the pound cake into 1-inch cubes.
  5. Layer the trifle: Start with a layer of cake cubes at the bottom of the dish (about one-third of the cake). Spoon half of the strawberries and their juices over the cake, followed by half of the blueberries. Spread one-third of the whipped cream over the berries.
  6. Repeat the layers: Add another third of the cake cubes, then the remaining strawberries and blueberries. Add another third of the whipped cream. Finish with the remaining cake cubes and a final generous layer of whipped cream. Smooth the top.
  7. Garnish with extra berries in a patriotic pattern. Cover loosely with plastic wrap and refrigerate for at least 2 hours before serving.

Notes

The instant pudding mix stabilizes the cream, keeping layers intact for hours. For best results, chill at least 2 hours before serving. The trifle improves after 4-6 hours in the fridge. Do not freeze. For a dairy-free version, use full-fat coconut cream and dairy-free pudding mix. For a gluten-free version, use gluten-free pound cake or angel food cake.
