  • 1 cup (240ml) buttermilk, room temperature
  • 2 large eggs, room temperature
  • 1 teaspoon white vinegar
  • 2 teaspoons vanilla extract
  • 1 to 2 tablespoons purple gel food coloring
  • 16 oz (454g) cream cheese, softened
  • ½ cup (113g) unsalted butter, softened
  • 4 cups (480g) powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • Pinch of salt
  • Optional: fresh edible flowers, gold or silver sprinkles, star-shaped cookie cutters

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans, line bottoms with parchment paper, and grease parchment.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt until no lumps remain.
  3. In a separate bowl, whisk together buttermilk, vegetable oil, eggs, vinegar, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients. Mix on low speed until just combined. Scrape sides and bottom. Add purple food coloring, starting with 1 tablespoon, and mix until desired color is reached.
  5. Divide batter evenly between prepared pans. Bake for 25-30 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs.
  6. Let cakes cool in pans for 10 minutes, then turn out onto a cooling rack. Remove parchment and cool completely (about 1 hour).
  7. For frosting: Beat softened cream cheese and butter together until smooth (about 2 minutes). Add vanilla and salt. Gradually add sifted powdered sugar, one cup at a time, mixing on low. Increase speed to medium and beat for 2 minutes until fluffy.
  8. Place one cake layer on serving plate. Spread about ¾ cup frosting evenly on top. Place second layer on top. Apply a thin crumb coat of frosting all over. Refrigerate for 20 minutes. Then apply final thicker layer of frosting and smooth with offset spatula.
  9. Decorate with edible flowers, sprinkles, or zodiac-themed decorations just before serving.

Notes

Room temperature ingredients are crucial for proper emulsification. Do not overmix the batter. Use gel food coloring for best color. Level cake layers if domed. Chill cake before slicing for clean cuts. Store leftovers in refrigerator for up to 5 days. Unfrosted layers can be frozen for up to 3 months.
