These pomegranate glazed roasted carrots are a revelation for anyone who thought they didn’t like carrots. The natural sweetness of the carrots intensifies, the molasses adds a tart, fruity punch, and a sprinkle of flaky salt ties it all together.

  • 2 lbs carrots, peeled and halved lengthwise
  • 3 tablespoons pomegranate molasses
  • 2 tablespoons olive oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon ground cumin
  • 1 teaspoon salt, plus more for finishing
  • ½ teaspoon freshly ground black pepper
  • ¼ cup fresh parsley, chopped
  • ½ cup pomegranate seeds, for garnish

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. Peel the carrots, cut off the tops and tails, and slice each carrot in half lengthwise. If very thick, cut into quarters so they are all roughly the same size.
  2. In a small bowl, whisk together the pomegranate molasses, olive oil, honey (or maple syrup), ground cumin, salt, and black pepper until well combined and glossy.
  3. Place the halved carrots on the prepared baking sheet. Pour about two-thirds of the glaze over the carrots and toss to coat evenly. Spread them out in a single layer.
  4. Roast for 20-25 minutes, flipping the carrots halfway through (at the 10-12 minute mark) with tongs, until tender and edges are caramelized and golden brown.
  5. Transfer the roasted carrots to a serving platter. Drizzle the remaining reserved glaze over the hot carrots. Sprinkle with fresh parsley and pomegranate seeds, and finish with a generous pinch of flaky sea salt.

Notes

For extra-sticky, caramelized carrots, brush with reserved glaze halfway through roasting instead of at the end. Watch the glaze in the last 5 minutes to prevent burning; tent with foil if browning too quickly. Flaky sea salt (like Maldon) is recommended for finishing.
