  • 6 tablespoons unsalted butter (85 grams, melted)
  • 3 cloves garlic, finely minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 teaspoon paprika
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and line a rimmed baking sheet with foil for easy cleanup.
  2. Using kitchen scissors, carefully cut down the center of the top shell of each lobster tail, stopping just before the tail fin. Gently pry the shell apart and lift the lobster meat, resting it on top of the shell (butterflying).
  3. In a small bowl, combine melted butter, minced garlic, fresh parsley, lemon juice, paprika, salt, and black pepper. Stir well to blend flavors.
  4. Brush the garlic butter generously over the exposed lobster meat, coating every nook.
  5. Place the lobster tails on the prepared baking sheet, spaced evenly.
  6. Roast in the preheated oven for 12-15 minutes, or until the lobster meat is opaque and slightly firm to the touch. If using a food thermometer, aim for an internal temperature of 140°F (60°C).
  7. About halfway through cooking, baste the lobster meat again with remaining garlic butter to lock in moisture and flavor.
  8. Remove from oven and let rest for a couple of minutes before serving.

Do not overcook lobster tails to avoid rubbery texture; check for opaque, firm meat. Use fresh garlic for best flavor.
