  • 1 cup pecan halves
  • ½ cup packed light brown sugar
  • ¼ cup heavy cream
  • 2 tablespoons unsalted butter
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract

Instructions

  1. Brown the butter: Place 6 tablespoons unsalted butter in a light-colored skillet over medium heat. Stir constantly until the butter turns deep amber and smells nutty, about 5-7 minutes. Pour into a heatproof bowl and let cool slightly.
  2. Make the crust: Preheat oven to 325°F (163°C). In a food processor, pulse graham crackers and pecans until finely ground. Add ¼ cup sugar and ¼ teaspoon salt; pulse to combine. Pour in warm brown butter and pulse until mixture looks like wet sand. Press firmly into the bottom of a 9-inch springform pan lined with parchment paper. Bake for 10 minutes, then set aside to cool. Cook over medium heat, stirring constantly, until mixture comes to a gentle boil. Boil for 2 minutes without stirring. Remove from heat and stir in ½ teaspoon vanilla extract and 1 cup pecan halves. Let cool for 5-10 minutes until thickened. Pour over chilled cheesecake and spread evenly. Let set for 15 minutes before slicing.
