  • ⅓ cup (67g) granulated sugar
  • 2 ¼ tsp instant yeast (one packet)

  • 1 cup (240ml) whole milk, warmed to about 110°F (43°C)
  • ¼ cup (57g) unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • ½ cup (113g) unsalted butter, softened (for filling)
  • 1 cup (220g) brown sugar, packed
  • 2 tbsp cinnamon, freshly ground
  • 2 tbsp bourbon
  • 6 slices crispy cooked bacon, roughly chopped
  • 4 oz (113g) cream cheese, softened (for frosting)
  • 2 tbsp (28g) unsalted butter, softened (for frosting)
  • 1 cup (120g) powdered sugar, sifted
  • 2 tbsp pure maple syrup
  • ½ tsp vanilla extract
  • Pinch of salt

Instructions

  1. In a large bowl, whisk together flour, granulated sugar, instant yeast, and salt.
  2. Warm the milk to about 110°F (43°C) and pour into the dry ingredients along with melted butter and eggs. Mix until a sticky dough forms.
  3. Knead the dough by stand mixer with dough hook on medium speed for 6-8 minutes or by hand on a floured surface for about 10 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise in a warm spot for 1 to 1 ½ hours until doubled in size.
  5. While dough rises, mix softened butter, brown sugar, cinnamon, and bourbon until smooth. Chop bacon and set aside.
  6. Punch down the risen dough and roll it out on a floured surface into a 16×12 inch rectangle about ¼ inch thick.
  7. Spread the bourbon cinnamon butter mixture evenly over the dough, leaving a ½ inch border on one long edge. Sprinkle chopped bacon evenly on top.
  8. Roll the dough tightly from the long edge with filling into a log and pinch the seam to seal.
  9. Slice the log into 12 even rolls about 1 ½ inches thick using a sharp knife or unflavored dental floss.
  10. Arrange rolls cut side up in a greased 9×13 inch baking dish, cover loosely, and let rise for 30-45 minutes until puffy.
  11. Preheat oven to 350°F (175°C) and bake rolls for 25-30 minutes until golden brown and cooked through.
  12. While rolls bake, beat together cream cheese, softened butter, powdered sugar, maple syrup, vanilla extract, and salt until smooth.
  13. Let rolls cool for about 10 minutes, then spread maple cream cheese frosting on top. Serve warm.

Notes

Do not rush the rising times for best flavor and softness. Use warm milk (about 110°F) to activate yeast properly. Cook bacon crispy but not burnt. Slice rolls with dental floss or a sharp serrated knife to avoid squashing. Spread frosting when rolls are warm, not hot, to prevent it from running off. For extra bourbon flavor, brush some on rolls before baking but be cautious to avoid burning.
