These moist zucchini chocolate chip muffins offer a tender crumb with a subtle sweetness from zucchini and melty chocolate chips, making them a cozy and comforting treat perfect for any occasion.

Ingredients

Scale
  • 1 ½ cups all-purpose flour (190g)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon (optional)
  • 2 large eggs, room temperature
  • ⅓ cup granulated sugar (67g)
  • ⅓ cup light brown sugar, packed (70g)
  • ⅓ cup vegetable oil or melted coconut oil (80ml)
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups zucchini, finely shredded and lightly squeezed of excess moisture (about 1 medium zucchini)
  • ¾ cup semi-sweet chocolate chips (130g)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 12-cup muffin tin with paper liners or lightly grease the cups.
  2. Finely shred about 1 ½ cups of zucchini (roughly one medium zucchini). Use a clean kitchen towel or paper towels to squeeze out some excess moisture.
  3. In a large bowl, whisk together 1 ½ cups all-purpose flour, 1 teaspoon baking powder, ½ teaspoon baking soda, ½ teaspoon salt, and 1 teaspoon ground cinnamon if using.
  4. In a separate bowl, beat 2 large eggs, then add ⅓ cup granulated sugar, ⅓ cup packed light brown sugar, ⅓ cup vegetable or melted coconut oil, and 1 teaspoon vanilla extract. Mix until smooth and combined.
  5. Pour the wet mixture into the dry ingredients and stir gently with a spatula until just combined. Avoid vigorous mixing.
  6. Fold in the shredded zucchini and ¾ cup chocolate chips carefully.
  7. Spoon the batter evenly into the prepared muffin tin, filling each about ¾ full.
  8. Bake for 20-25 minutes. Check doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
  9. Let muffins cool in the tin for 5 minutes before transferring to a cooling rack.

Notes

Do not overmix the batter to keep muffins tender. Squeeze excess moisture from zucchini to avoid soggy muffins. Use room temperature eggs for better emulsification. Use an oven thermometer to ensure correct baking temperature. Let muffins cool on a rack to prevent sogginess. Cinnamon adds a cozy warmth and is recommended.
