  • 2 cups (about 260g) grated zucchini, squeezed to remove excess moisture
  • 1 ½ cups (190g) all-purpose flour (or half whole wheat flour)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs, room temperature
  • ¾ cup (150g) granulated sugar
  • ½ cup (100g) packed brown sugar
  • ½ cup (120ml) vegetable oil (or melted coconut oil)
  • 1 teaspoon pure vanilla extract
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Grate about 2 medium zucchinis (roughly 2 cups grated). Place the grated zucchini in a clean kitchen towel and squeeze out as much excess moisture as possible.
  2. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon until evenly combined.
  4. In a separate bowl, beat the eggs with granulated sugar and brown sugar until well combined. Slowly whisk in the vegetable oil and vanilla extract until smooth and glossy.
  5. Add the squeezed zucchini into the wet ingredients and stir gently.
  6. Pour the dry ingredients into the wet zucchini mixture. Fold gently with a spatula until just combined, avoiding overmixing.
  7. Fold in the chocolate chips carefully to distribute evenly.
  8. Spoon the batter into the prepared loaf pan and smooth the top.
  9. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Start checking at 55 minutes.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Squeeze excess moisture from zucchini to prevent sogginess. Fold batter gently to avoid toughness. Toss chocolate chips in flour before folding to prevent sinking. Check baking starting at 55 minutes and tent with foil if browning too fast. Use room temperature eggs for best results.
