  • ½ cup unsweetened cocoa powder (50 g)
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon (optional)
  • 1 cup granulated sugar (200 g)
  • ½ cup brown sugar, packed (100 g)
  • 2 large eggs, room temperature
  • ½ cup vegetable oil (120 ml)
  • 1 tsp vanilla extract
  • 1 ½ cups zucchini, shredded and gently squeezed dry (about 1 medium zucchini)
  • ½ cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5 inch loaf pan with butter or line it with parchment paper.
  2. Shred about 1 ½ cups of zucchini (1 medium zucchini) using a box grater. Gently squeeze out excess moisture with a clean kitchen towel or paper towel.
  3. In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon until evenly combined.
  4. In another bowl, whisk granulated sugar and brown sugar with eggs until light and fluffy. Slowly add vegetable oil and vanilla extract, mixing until smooth.
  5. Pour the wet mixture into the dry ingredients. Stir gently with a spatula until just combined; do not overmix.
  6. Fold in the shredded zucchini and chocolate chips (if using) carefully to keep the batter light.
  7. Pour batter into the prepared loaf pan and spread evenly.
  8. Bake for 50-60 minutes, starting to check at 50 minutes by inserting a toothpick in the center; it should come out with a few moist crumbs but no wet batter.
  9. Let the bread cool in the pan for 15 minutes, then transfer to a cooling rack for at least 30 minutes.
  10. Slice and enjoy slightly warm or at room temperature.

Notes

Do not overmix the batter to avoid dense bread. Keep some moisture in the zucchini for tenderness but avoid excess water. Tent with foil if the top browns too quickly. Use room temperature eggs and oil for better blending. Chocolate chips are optional but add extra chocolate bursts. Fresh zucchini is preferred over older, watery ones. For gluten-free, swap flour with a gluten-free blend. For dairy-free, use dairy-free chocolate chips and coconut oil.
