Lighter Graveyard Taco Dip with Sour Cream Tombstones

A lighter, healthier version of the classic Halloween taco dip, featuring a creamy Greek yogurt base, spiced ground turkey, and festive sour cream tombstones. It’s quick, easy, and perfect for parties.

  • 2 tablespoons taco seasoning (low-sodium)
  • 1/4 cup water
  • 1 cup plain Greek yogurt
  • 1/2 cup light sour cream (for base)
  • 2 cups shredded lettuce (iceberg or romaine)
  • 1 cup diced tomatoes (Roma or plum, seeds removed)
  • 1 cup shredded reduced-fat cheddar cheese
  • 1/2 cup sliced black olives
  • 1/4 cup sliced green onions
  • 1/2 cup light sour cream (for tombstones)
  • Black food coloring gel (a few drops)
  • 1 large bag tortilla chips (scoop-style)

Instructions

  1. Cook the meat: Place a large skillet over medium-high heat. Add the lean ground turkey and cook, breaking it apart with a wooden spoon, until browned and cooked through—about 6 to 8 minutes. Drain any excess fat if needed. Lower the heat to medium, sprinkle in the taco seasoning, and add the water. Stir well and let it simmer for 2 to 3 minutes until the sauce thickens slightly. Set aside to cool slightly.
  2. Make the creamy base: In a small bowl, combine the plain Greek yogurt and 1/2 cup light sour cream. Stir until smooth and well blended. Set aside.
  3. Assemble the first layers: Spread the creamy yogurt mixture evenly across the bottom of a 9×13-inch baking dish. Next, sprinkle the shredded lettuce over the top, covering the cream completely. Then, add the diced tomatoes, spreading them out evenly. Follow with the sliced black olives and half of the green onions.
  4. Add the warm meat layer: Spoon the cooled taco meat over the veggies. Spread it gently to cover. Sprinkle the shredded cheddar cheese over the hot meat so it melts just a little. Let it sit for a minute.
  5. Create the sour cream tombstones: In a small bowl, mix the remaining 1/2 cup light sour cream with a few drops of black food coloring gel until it turns a dark, inky gray. Spoon this mixture into a piping bag fitted with a small round tip (or a zip-top bag with a tiny corner snipped off). Pipe small rectangle shapes (about 1 inch tall and 1/2 inch wide) across the top of the dip, spacing them out like a graveyard. Use the tip of a toothpick to write ‘R.I.P.’ on each tombstone if desired.
  6. Garnish and serve: Sprinkle the remaining green onions over the top for a grassy effect. Serve immediately with tortilla chips, or refrigerate until party time.

Notes

For a vegetarian version, swap ground turkey for plant-based crumble or black beans. To make it dairy-free, use thick coconut yogurt and dairy-free sour cream. Pat lettuce and tomatoes dry to prevent watery dip. Let meat cool slightly before layering to avoid wilting lettuce. Pipe tombstones with confidence—imperfect ones look more authentic.
