A light and hearty crockpot taco soup made with lean ground turkey, black beans, kidney beans, corn, and a secret ingredient—ranch seasoning. This easy, healthy soup is perfect for busy weeknights and meal prep.

Ingredients

Scale
  • 1 lb lean ground turkey (93/7)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can corn, drained (or 1½ cups frozen corn)
  • 1 (14.5 oz) can diced tomatoes (fire-roasted if available)
  • 1 (14.5 oz) can crushed tomatoes
  • 1 (4 oz) can diced green chiles (mild or medium)
  • 1 (1 oz) packet ranch dressing mix (e.g., Hidden Valley)
  • 1 (1 oz) packet taco seasoning (e.g., McCormick or Old El Paso)
  • 2 cups low-sodium chicken broth (or vegetable broth)
  • Optional toppings: Greek yogurt or light sour cream, shredded reduced-fat cheddar cheese, fresh cilantro, diced avocado, sliced jalapeños, crushed tortilla chips, lime wedges

Instructions

  1. Brown the ground turkey: Heat a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a wooden spoon, until no longer pink—about 5-7 minutes. Do not drain fat if using lean turkey.
  2. Sauté the aromatics: Add the diced onion to the skillet with the cooked turkey. Cook for 3-4 minutes until the onion softens and becomes translucent. Add the minced garlic and cook for 30 seconds more until fragrant.
  3. Transfer to the slow cooker: Scoop the turkey and onion mixture into a 6-quart or larger slow cooker.
  4. Add the canned ingredients: Add the drained and rinsed black beans, drained and rinsed kidney beans, drained corn, diced tomatoes (with juices), crushed tomatoes, and diced green chiles to the slow cooker.
  5. Add the seasonings and broth: Sprinkle the ranch dressing mix and taco seasoning over everything. Pour in the chicken broth. Stir well until the seasonings are mostly dissolved.
  6. Cook low and slow: Cover the crockpot and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. For best flavor, cook on LOW for 7 hours.
  7. Taste and adjust: About 30 minutes before serving, taste the soup and adjust seasoning if needed. Add more heat (cayenne or hot sauce), tang (lime juice), or broth/water if too salty.
  8. Serve with toppings: Ladle the soup into bowls and let everyone customize with desired toppings.

Notes

For a vegetarian version, skip the ground turkey and add an extra can of beans (chickpeas or pinto) plus 1 cup frozen corn. Use vegetable broth. For gluten-free, check that ranch and taco seasoning packets are certified gluten-free. To make soup thicker, mash ½ cup of beans before adding or stir in 1 tablespoon cornstarch mixed with 2 tablespoons cold water during the last 30 minutes of cooking. The soup freezes well for up to 3 months.
