Ingredients

Scale
  • 1 ½ pounds Brussels sprouts, trimmed and halved
  • 3 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, freshly ground
  • ½ teaspoon garlic powder (optional)
  • ½ cup balsamic vinegar
  • 2 tablespoons honey or maple syrup
  • 1 cup pomegranate arils (from about 1 large pomegranate)
  • ¼ cup toasted pecans or walnuts, roughly chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
  2. Rinse Brussels sprouts under cold water and pat completely dry. Trim off tough stem ends (about ¼ inch) and remove any yellow or damaged outer leaves. Cut each sprout in half lengthwise through the stem.
  3. In a large mixing bowl, toss the halved Brussels sprouts with olive oil, salt, pepper, and garlic powder (if using). Use your hands to ensure every cut side is coated.
  4. Arrange the sprouts in a single layer on the prepared baking sheet, cut-side down. Roast for 20-25 minutes, flipping halfway through, until deep golden brown and tender.
  5. While the sprouts roast, combine balsamic vinegar and honey (or maple syrup) in a small saucepan. Bring to a gentle simmer over medium heat, then reduce heat to low. Let bubble for 8-10 minutes, stirring occasionally, until thickened enough to coat the back of a spoon.
  6. Once the sprouts are out of the oven, transfer them to a serving platter or bowl. Drizzle the balsamic glaze over the top while still hot. Sprinkle pomegranate arils and toasted nuts (if using) over the top.
  7. Serve immediately.

Notes

Patting sprouts dry is crucial for caramelization. Arrange cut-side down for best browning. Watch the balsamic glaze carefully as it can burn quickly. Drizzle glaze before adding pomegranate arils to help them stick. Leftovers keep in the refrigerator for up to 3 days; reheat in the oven or air fryer for best texture.
