A creamy, cheesy soup made with ground beef, frozen hash browns, and a blend of condensed soups, all cooked low and slow in a crockpot. Perfect for busy weeknights and guaranteed to please kids and adults alike.

Ingredients

Scale
  • 1 pound ground beef (80/20)
  • 1 medium yellow onion, diced (about 1 cup)
  • 2 cloves garlic, minced (or 1 teaspoon garlic powder)
  • 4 cups low-sodium beef broth
  • 1 can (10.5 oz) condensed cheddar cheese soup
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 bag (30 oz) frozen shredded hash browns
  • 2 cups shredded sharp cheddar cheese
  • 1 cup whole milk (2% works, but whole milk is best)
  • 2 tablespoons unsalted butter
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon mustard powder (or 1 tablespoon yellow mustard)
  • Salt and black pepper to taste (start with 1/2 teaspoon salt and 1/4 teaspoon pepper)
  • Optional toppings: crispy bacon bits, sliced green onions, extra shredded cheese, pickled jalapeños

Instructions

  1. Brown the beef and onion: Heat a large skillet over medium-high heat. Add the ground beef and diced onion. Cook, breaking up the meat, until browned and onion is soft (6-8 minutes). Leave about 1 tablespoon of fat in the pan. Add minced garlic and cook for 30 seconds. Transfer to the slow cooker.
  2. Add the broth and soups: Pour beef broth into the slow cooker. Add both cans of condensed soup. Stir until mostly combined.
  3. Add the hash browns: Dump the entire bag of frozen shredded hash browns into the slow cooker. Do not thaw. Stir gently to distribute.
  4. Season: Add Worcestershire sauce, mustard powder, and a pinch of salt and pepper. Stir again.
  5. Cook: Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until hash browns are tender and soup has thickened.
  6. Add dairy: About 20 minutes before serving, stir in shredded cheddar cheese, milk, and butter. Stir until cheese is melted and soup is smooth.
  7. Taste and adjust: Add more salt, pepper, or Worcestershire sauce if needed.
  8. Serve: Ladle into bowls and add desired toppings.

Notes

Add dairy in the last 20 minutes to prevent graininess. Shred your own cheese for best texture. If soup is too thin, mash some hash browns against the side of the slow cooker or add a cornstarch slurry. Leftovers keep well for up to 5 days in the fridge or 3 months in the freezer.
