Homemade Sweet and Tangy Bread and Butter Pickles

A quick and easy recipe for sweet and tangy bread and butter pickles with a perfect balance of sweetness and vinegar tang, enhanced by cinnamon and mustard seeds.

Ingredients

  • 6 cups thinly sliced Kirby cucumbers or pickling cucumbers
  • 2 cups white vinegar (5% acidity)
  • 1 1/2 cups granulated sugar
  • 2 tablespoons pickling or kosher salt
  • 2 tablespoons yellow mustard seeds
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon ground cinnamon
  • 1 medium onion, thinly sliced
  • 45 whole cloves (optional)

Instructions

  1. Place the thinly sliced cucumbers and onions in a large bowl. Sprinkle with 2 tablespoons of pickling salt and toss well to coat. Let them sit for about 1 to 2 hours, stirring occasionally to draw out excess water and keep the pickles crisp.
  2. In a medium saucepan, combine 2 cups white vinegar, 1 1/2 cups sugar, mustard seeds, turmeric, cinnamon, and cloves. Bring to a boil over medium heat, stirring until sugar dissolves. Once boiling, reduce heat and simmer for 2-3 minutes to infuse flavors.
  3. Drain the salted cucumbers and onions in a colander, pressing gently to remove as much liquid as possible. Rinse briefly under cold water to remove excess salt, then drain thoroughly again.
  4. Transfer the drained cucumbers and onions back to a clean bowl. Pour the hot brine over them, stirring gently to mix. Let the mixture cool to room temperature (about 30 minutes).
  5. Using a slotted spoon, pack the cucumber mixture into sterilized jars, leaving about 1/2 inch headspace. Pour the remaining brine over the top to cover completely. Seal the jars tightly.
  6. Refrigerate the pickles for at least 24 hours before eating. For best flavor, let them chill for 3 days to allow the flavors to meld and deepen.

Notes

For crisper pickles, soak sliced cucumbers in ice water for 30 minutes before salting. Use clean utensils when handling pickles to avoid contamination. Store pickles in the refrigerator and consume within 3-4 weeks. Optionally, use apple cider vinegar for a fruitier tang or brown sugar for richer sweetness. Hot water bath canning can be used for longer shelf life.
