A deeply flavored, velvety apple butter that tastes like fall in a jar, made entirely without added sugar. The slow cooker does all the work, resulting in a naturally sweet, caramelized spread perfect for toast, oatmeal, and more.

  • 3 pounds apples (about 68 medium), a mix of sweet and tart varieties like Honeycrisp, Fuji, Gala, and Granny Smith
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1 teaspoon vanilla extract (optional)
  • 2 tablespoons lemon juice
  • 1/4 cup water or apple cider

Instructions

  1. Wash, peel (if desired), core, and chop apples into 1-inch chunks. You should have about 8-9 cups.
  2. Place chopped apples in a slow cooker. Add cinnamon, nutmeg, cloves, allspice, vanilla extract, lemon juice, and water or apple cider. Stir to combine.
  3. Cover and cook on low for 8-10 hours, until apples are very soft and falling apart.
  4. Turn off slow cooker and let mixture cool for 10 minutes. Use an immersion blender to puree until smooth. (Alternatively, carefully transfer to a blender in batches.)
  5. For a thicker butter, return puree to slow cooker and cook on low with lid off for 1-2 more hours, stirring occasionally, until desired consistency is reached.
  6. Test consistency by placing a small spoonful on a chilled plate; it should hold its shape without running.
  7. Let apple butter cool completely, then transfer to clean jars or containers. Refrigerate for up to 3 weeks or freeze for up to 6 months.

Notes

For a deeper flavor, use a mix of sweet and tart apples. Don’t skip the lemon juice—it preserves color and balances sweetness. Cooking with the lid off at the end helps achieve a spreadable texture. The apple butter thickens as it cools.
