These healthy turkey meal prep bowls are simple, satisfying, and actually taste good—even on a Thursday when you’re running on three hours of sleep and a questionable coffee. They come together in about 45 minutes and give you five lunches that stay fresh for up to 5 days.

  • 1.5 pounds ground turkey (93/7 or 85/15)
  • 2 medium sweet potatoes (about 2 large)
  • 3 cups broccoli florets (fresh)
  • 2 tablespoons olive oil, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 3 cups cooked quinoa or brown rice
  • Fresh lemon juice (from ½ lemon)
  • Optional garnish: fresh parsley or cilantro

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper if using.
  2. Prep the sweet potatoes: Peel 2 medium sweet potatoes and dice them into ½-inch cubes. Toss them in a bowl with 1 tablespoon olive oil, a pinch of salt, and a few cracks of black pepper. Spread them on one half of the baking sheet in a single layer.
  3. Prep the broccoli: Cut 3 cups of broccoli florets into similar-sized pieces. Toss with 1 tablespoon olive oil, salt, and pepper. Place them on the other half of the baking sheet.
  4. Roast the veggies: Place the baking sheet in the oven and roast for 20-25 minutes. At the 15-minute mark, check the broccoli. If it’s done, remove it and let the sweet potatoes continue roasting until fork-tender and caramelized.
  5. Cook the turkey while veggies roast: Heat a large skillet over medium-high heat. Add 1 teaspoon olive oil (or use cooking spray). Add 1.5 pounds ground turkey and break it apart with a wooden spoon. Cook for 5-6 minutes, stirring occasionally, until no longer pink.
  6. Season the turkey: Reduce heat to medium. Add 1 teaspoon garlic powder, 1 teaspoon smoked paprika, ½ teaspoon ground cumin, ½ teaspoon onion powder, ¼ teaspoon cayenne (if using), ½ teaspoon salt, and ¼ teaspoon black pepper. Stir well and cook for another 2-3 minutes until fragrant.
  7. Add a splash of moisture: Pour in 2-3 tablespoons of water or low-sodium chicken broth. Stir and let it simmer for 1 minute.
  8. Assemble the bowls: Divide the cooked quinoa or brown rice evenly among 5 meal prep containers (about ½ cup each). Top with the seasoned turkey (about ⅓ cup each). Add the roasted sweet potatoes and broccoli. Squeeze a little fresh lemon juice over each bowl.
  9. Cool completely before sealing: Let the containers sit on the counter for 15-20 minutes with the lids slightly ajar.
  10. Store in the fridge: Seal the lids tightly and refrigerate. These bowls stay fresh for up to 5 days. Reheat in the microwave for 2-3 minutes, or in a skillet for a crispier texture.

Notes

Don’t overcook the turkey; add a splash of broth to keep it moist. Roast veggies at high heat (400°F) for caramelization. Let everything cool before storing to prevent sogginess. These bowls taste better on day two or three as flavors meld. For a crispier texture when reheating, use a skillet with a splash of water.
