  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound lean ground turkey (93/7)
  • 2 medium sweet potatoes, peeled and cut into 1/2-inch cubes (about 3 cups)
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and minced (optional)
  • 1 can (15 ounces) fire-roasted diced tomatoes, undrained
  • 1 can (15 ounces) tomato sauce
  • 2 cans (15 ounces each) cannellini beans or great northern beans, drained and rinsed
  • 2 cups low-sodium chicken broth (or vegetable broth for vegetarian)
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper
  • Fresh cilantro, chopped (for serving)
  • Diced avocado (for serving)
  • Lime wedges (for serving)
  • Sour cream or Greek yogurt (for serving)
  • Shredded cheddar cheese (for serving)

Instructions

  1. Prep your ingredients: dice the onion, mince the garlic, cube the sweet potatoes, dice the bell pepper, and drain and rinse the white beans. Measure out spices into a small bowl.
  2. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add ground turkey and cook, breaking it up with a wooden spoon, until no longer pink and browned (5-7 minutes). Transfer to a plate and set aside.
  3. Reduce heat to medium. Add diced onion to the pot and cook for 3-4 minutes until translucent, scraping up browned bits. Add minced garlic, diced bell pepper, and jalapeño (if using). Cook for 2 minutes until fragrant.
  4. Add chili powder, cumin, smoked paprika, oregano, cayenne, salt, and pepper to the pot. Stir constantly for 1 minute until spices are fragrant.
  5. Pour in fire-roasted tomatoes, tomato sauce, and chicken broth. Stir well, scraping up any browned bits. Add cubed sweet potatoes. Bring to a boil over high heat.
  6. Reduce heat to low, cover the pot, and simmer for 20 minutes until sweet potatoes are fork-tender.
  7. Stir in drained white beans and cooked ground turkey. Bring back to a gentle simmer. Cook uncovered for 10-15 minutes to meld flavors and thicken slightly.
  8. Taste and adjust seasoning with more salt, lime juice, or cayenne as needed.
  9. Remove from heat and let rest for 5 minutes before serving. Ladle into bowls and top with desired garnishes.

Notes

For a vegetarian version, omit the turkey and add an extra can of beans or diced mushrooms. Use vegetable broth. The chili tastes even better the next day as flavors meld. To thicken, mash some sweet potato cubes against the pot. For a smoky chipotle version, replace cayenne with 1-2 teaspoons adobo sauce. Freezes well for up to 3 months.
