  • 1.5 pounds (680g) boneless, skinless chicken breasts (23 large)
  • 3 cups (300g) broccoli florets, chopped into bite-sized pieces
  • 1 large red bell pepper, sliced into strips
  • 1 medium zucchini, halved lengthwise and sliced into half-moons
  • 2 cups (400g) cooked rice (brown, white, or cauliflower)
  • 3 tablespoons (45ml) olive oil, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked or sweet)
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste (about 1 teaspoon salt, 1/2 teaspoon pepper)
  • 1 tablespoon (15ml) lemon juice, freshly squeezed
  • For the optional sauce:
  • 1/2 cup (120g) plain Greek yogurt (full-fat or 2%)
  • 1 tablespoon (15ml) lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Wash and chop all vegetables. Pat chicken breasts dry with paper towels. Season both sides of chicken with salt, pepper, garlic powder, paprika, and oregano, rubbing in with your hands.
  2. Cook the chicken: Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Once shimmering, place chicken breasts in pan. Cook 5-7 minutes per side until deep golden brown and internal temperature reaches 165°F (74°C). Transfer to cutting board and rest 5 minutes before slicing.
  3. Cook the vegetables: In the same skillet, add remaining 1 tablespoon olive oil. Add broccoli, bell pepper, and zucchini. Season with salt and pepper. Cook over medium-high heat, stirring occasionally, for 5-7 minutes until tender-crisp with charred edges.
  4. Slice the chicken: While vegetables cook, slice rested chicken breasts against the grain into strips or bite-sized cubes.
  5. Assemble the bowls: Divide cooked rice among 4 meal prep containers. Top each with equal portions of sliced chicken and roasted vegetables. Drizzle with lemon juice.
  6. Make the optional sauce: In a small bowl, whisk together Greek yogurt, lemon juice, Dijon mustard, salt, and pepper. Store separately and add just before eating.

Notes

Pat chicken dry for best sear. Do not overcrowd pan. Let chicken rest 5 minutes before slicing. Cook vegetables in same pan as chicken for extra flavor. Bowls taste better on day 2-3 as flavors meld. Store sauce separately to prevent sogginess. Reheat in skillet with water for best texture.
