  • 1 cup (240 ml) plain full-fat Greek yogurt (preferably Fage)
  • ½ cup (75 g) fresh or frozen berries (blueberries, strawberries, or raspberries)
  • 12 teaspoons honey or maple syrup (optional)
  • ½ teaspoon vanilla extract
  • Pinch of ground cinnamon
  • 1 cup (90 g) rolled oats
  • ½ cup (60 g) chopped nuts (almonds, walnuts, or pecans)
  • ¼ cup (20 g) unsweetened shredded coconut (optional)
  • 2 tablespoons ground flaxseed
  • 3 tablespoons maple syrup or honey
  • 2 tablespoons olive oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 300°F (150°C). In a large bowl, combine rolled oats, chopped nuts, shredded coconut, ground flaxseed, and salt. Mix well.
  2. In a small bowl, whisk together maple syrup or honey, olive or coconut oil, and vanilla extract until smooth.
  3. Pour the wet mixture over the dry ingredients and stir gently but thoroughly to coat evenly.
  4. Spread the granola mixture evenly on a rimmed baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes, stirring halfway through to prevent burning, until golden and fragrant.
  6. Let the granola cool completely on the tray to crisp up.
  7. In a bowl, mix Greek yogurt with vanilla extract, cinnamon, and honey or maple syrup if using. Stir well.
  8. In serving glasses or bowls, layer yogurt, berries, and a generous handful of granola. Repeat layers if desired.
  9. Serve immediately for best texture or prepare in advance keeping granola separate until serving.

Notes

Bake granola at a low temperature to avoid burning and stir halfway through baking. Cool granola completely before assembling parfait to maintain crunch. Store granola separately if preparing parfait ahead to prevent sogginess. Frozen berries should be thawed slightly before use to avoid watering down the parfait. Nut-free and dairy-free substitutions are possible.
