Instructions

  1. In a mixing bowl, combine 1 cup plain Greek yogurt, ½ cup natural peanut or almond butter, ¼ cup honey or maple syrup, and 1 teaspoon vanilla extract. Stir gently until smooth and creamy, about 2 minutes.
  2. Gradually fold in 1 ½ cups rolled oats, ½ cup dark chocolate chips, and a pinch of salt. If using chia seeds or flaxseed, add them now. Mix until evenly combined but avoid overmixing.
  3. Check the mixture consistency; it should hold together when pressed. If too wet, add more oats one tablespoon at a time. If too dry, add a splash of yogurt.
  4. Shape the mixture into balls about 1 to 1.5 inches in diameter using hands or a small cookie scoop. Place on a baking sheet or plate lined with parchment paper. Yield is roughly 15-18 balls.
  5. Refrigerate the protein balls for at least 30 minutes to firm up.
  6. Store the chilled protein balls in an airtight container in the refrigerator for up to 5 days or freeze for up to a month.
