A quick, refreshing, and hydrating summer salad combining juicy watermelon, fresh mint, and lime juice with no added sugar. Perfect as a light side or palate cleanser.

  • 6 cups (900g) seedless, ripe watermelon, cut into 1-inch cubes
  • 1/4 cup (10g) fresh mint leaves, roughly chopped
  • 2 tablespoons (30ml) fresh lime juice
  • 1/8 teaspoon sea salt (optional)
  • Optional extras: freshly ground black pepper or chili flakes (a small pinch), extra virgin olive oil drizzle, feta cheese sprinkle

Instructions

  1. Cut off the rind of the watermelon and slice into 1-inch cubes, aiming for uniform pieces (about 10 minutes).
  2. Rinse fresh mint leaves under cold water, pat dry, remove stems, and roughly chop (about 2 minutes).
  3. Roll the lime on the counter to loosen juices, cut in half, and squeeze out 2 tablespoons (30 ml) of juice, straining out seeds if needed.
  4. In a large mixing bowl, gently toss watermelon cubes with chopped mint and lime juice. Add a pinch of sea salt and stir carefully without mashing the fruit (about 3 minutes).
  5. Chill the salad in the refrigerator for 10-15 minutes to allow flavors to meld. Before serving, gently stir and adjust lime juice or salt if needed.

Notes

Use fresh, firm watermelon for best texture; avoid watery varieties. Add mint last and toss gently to prevent bruising. Fresh lime juice is preferred over bottled. Optional pinch of sea salt enhances sweetness. Prepare close to serving time to keep mint fresh and watermelon firm. Drain excess liquid if salad is too juicy before serving.
