Fresh Watermelon Mint Agua Fresca

A simple, refreshing summer drink blending fresh watermelon, mint, lime, and a touch of sweetener, perfect for hot days and easy to make in under 10 minutes.

Ingredients

  • 6 cups diced fresh watermelon (about 1 small to medium watermelon)
  • 1012 fresh mint leaves, washed and gently bruised
  • Juice of 1 large lime (about 2 tablespoons)
  • 12 tablespoons agave syrup, honey, or simple syrup (adjust to taste)
  • 2 cups cold water (about 16 fl oz)
  • Ice cubes for serving
  • Pinch of sea salt (optional)

Instructions

  1. Remove the rind and cut the watermelon into roughly 1-inch cubes. Measure about 6 cups (900 grams) of diced watermelon and place it in your blender.
  2. Add 10-12 fresh mint leaves and the juice of one large lime to the blender. Add extra lime juice if you prefer a tangier flavor.
  3. Add 1 to 2 tablespoons of your chosen sweetener. Start with less and adjust after tasting.
  4. Blend on high for 1-2 minutes until the mixture is smooth and slightly frothy.
  5. Pour the blended mixture through a fine mesh strainer or sieve into a large bowl or pitcher, pressing the pulp gently to extract all the juice.
  6. Stir in 2 cups (16 fl oz) of cold water to lighten the juice. Adjust water amount to taste.
  7. Taste and add more sweetener or lime juice if needed.
  8. Refrigerate for at least 30 minutes or serve immediately over plenty of ice cubes. Garnish with a sprig of mint or a lime wedge if desired.

Notes

Use ripe but firm watermelon for best flavor. Do not overblend the mint to avoid bitterness. Straining the juice ensures a smooth texture. Adjust sweetness and lime juice to taste. Adding sparkling water before serving adds a fizzy twist.
