A refreshing summer salad combining juicy watermelon cubes, creamy feta cheese, fresh mint, and a tangy balsamic glaze for a perfect balance of texture and flavor.

Ingredients

Scale
  • 4 cups seedless watermelon, cut into 1-inch cubes
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1/2 cup balsamic vinegar
  • 1 tablespoon honey or maple syrup (optional)
  • 1 tablespoon extra virgin olive oil
  • Pinch of freshly ground black pepper
  • Light sprinkle of sea salt, to taste

Instructions

  1. Wash the outside of the watermelon to remove any dirt. Cut the watermelon into 1-inch cubes (about 4 cups). Remove any seeds if not seedless. Place in a large mixing bowl.
  2. Pour 1/2 cup balsamic vinegar into a small saucepan over medium heat. Simmer and reduce for 10-15 minutes until thick and syrupy, stirring occasionally. Stir in 1 tablespoon honey or maple syrup halfway through if desired. Remove from heat and let cool slightly.
  3. Add 1 cup crumbled feta cheese and 1/4 cup chopped fresh mint leaves to the watermelon in the mixing bowl. Drizzle 1 tablespoon extra virgin olive oil over the top and gently toss to combine without breaking the watermelon cubes.
  4. Sprinkle a light pinch of sea salt and freshly ground black pepper over the salad. Toss lightly again.
  5. Transfer the salad to a serving dish and drizzle the balsamic glaze generously over the top. Serve immediately for best texture.

Notes

Reduce balsamic vinegar slowly over medium heat to avoid burning. Toss salad gently to keep watermelon cubes intact. Assemble salad just before serving to prevent watermelon from becoming soggy. For dairy-free option, substitute feta with firm tofu or plant-based cheese. Chilling watermelon beforehand keeps salad cool and refreshing.
