  • 2 cups (300 grams) seedless watermelon, firm but juicy, cut into 1-inch cubes
  • 1 cup (150 grams) feta cheese, crumbled or cut into ½-inch cubes
  • 1520 fresh mint leaves, whole or torn
  • 1 tablespoon extra virgin olive oil (optional)
  • Pinch of freshly ground black pepper
  • Wooden skewers or toothpicks for assembling

Instructions

  1. Rinse and dry the watermelon. Slice off the rind and cut the flesh into roughly 1-inch (2.5 cm) cubes.
  2. Drain feta from any excess brine and pat dry with a paper towel. Cut into cubes about ½-inch (1.25 cm) or keep crumbled pieces large enough to not fall apart.
  3. Rinse fresh mint leaves and gently pat dry. Use whole leaves or tear into smaller pieces if desired.
  4. Thread one watermelon cube, one feta cube, and one mint leaf onto each toothpick or skewer in that order. Repeat if using longer skewers, leaving space between pieces.
  5. Arrange the skewers on a serving platter. Drizzle lightly with extra virgin olive oil and sprinkle a pinch of freshly ground black pepper over the top.
  6. Serve chilled or at cool room temperature.

Notes

Choose firm but juicy watermelon to avoid mushy skewers. Handle feta gently to prevent crumbling. Assemble skewers close to serving time for best texture and flavor. Keep assembled skewers covered in the fridge and add olive oil and pepper just before serving. Variations include swapping watermelon for cantaloupe or honeydew, using vegan feta or marinated tofu for dairy-free options, and substituting mint with basil or cilantro.
