Fresh Red White and Blue Parfait Cups with Granola

A quick and easy 5-minute patriotic breakfast parfait featuring layers of creamy Greek yogurt, fresh berries, and toasted homemade granola for a crunchy, flavorful start to your day.

Ingredients

  • 2 cups (480 ml) plain Greek yogurt (full-fat or low-fat)
  • 2 tablespoons (30 ml) honey or maple syrup
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (150 g) fresh strawberries, hulled and sliced
  • 1 cup (150 g) fresh blueberries
  • ½ cup (75 g) fresh raspberries (optional)
  • 1 cup (90 g) old-fashioned rolled oats
  • ¼ cup (30 g) chopped nuts (walnuts or almonds), toasted
  • 2 tablespoons (30 ml) maple syrup
  • 2 tablespoons (30 g) coconut oil or melted butter
  • ½ teaspoon (1 g) ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat oven to 325°F (160°C). In a bowl, mix oats, chopped nuts, cinnamon, and salt.
  2. In a small bowl, whisk together maple syrup and coconut oil (or butter). Pour over dry ingredients and stir until well coated.
  3. Spread granola mixture evenly on a baking sheet. Bake for 15-20 minutes, stirring halfway through. Remove when golden and aromatic. Let cool completely.
  4. In another bowl, combine Greek yogurt, honey (or maple syrup), and vanilla extract. Stir gently until smooth and creamy. Adjust sweetness if needed.
  5. Rinse and dry strawberries, blueberries, and raspberries. Slice strawberries thinly.
  6. Assemble parfait cups by layering: spoonful of yogurt, layer of strawberries, sprinkle of granola, then yogurt, blueberries, granola, and finish with raspberries on top.
  7. Optionally drizzle honey or maple syrup on top. Serve immediately or refrigerate up to 2 hours before serving.

Notes

Toast granola at a low temperature and stir frequently to avoid burning. Assemble parfait just before serving to keep granola crunchy. Use firm, ripe berries and dry them well to prevent sogginess. Store granola separately if prepping ahead. For dairy-free, substitute yogurt with coconut or almond milk yogurt. Frozen berries can be used if thawed and drained well.
