  • 1 can chickpeas (15 oz / 425 g), drained and rinsed
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes (150 g), halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 1/2 cup feta cheese, crumbled (optional)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste

Instructions

  1. Rinse and dice the cucumber into bite-sized pieces. Halve the cherry tomatoes and finely chop the red onion, parsley, and mint.
  2. Open the can of chickpeas, drain the liquid, and rinse the chickpeas under cold water.
  3. In a small bowl, whisk together the extra virgin olive oil, freshly squeezed lemon juice, minced garlic, dried oregano, salt, and black pepper. Adjust seasoning to taste.
  4. Combine the chickpeas, cucumber, cherry tomatoes, red onion, parsley, and mint in a large mixing bowl.
  5. Pour the dressing over the salad and gently toss to coat everything evenly.
  6. Sprinkle crumbled feta cheese on top (or toasted nuts/seeds for a dairy-free option).
  7. Serve immediately or chill for 15-20 minutes if preferred cold.

Notes

Use good quality extra virgin olive oil for best flavor. Rinse canned chickpeas well to reduce metallic taste. Mince garlic finely to avoid harsh bites. Dressing can be made ahead and stored in the fridge for 1-2 days. For a dairy-free version, replace feta with toasted nuts or seeds. Add crushed red pepper flakes for subtle heat if desired.
