Instructions

  1. Make the dressing: In a small bowl, whisk together ¼ cup extra virgin olive oil, 2 tablespoons apple cider vinegar or lemon juice, 1 teaspoon Dijon mustard, 1 teaspoon honey or maple syrup if using, and salt and pepper to taste until emulsified. Set aside.
  2. Prepare vegetables: Wash all produce thoroughly. Use a salad spinner to dry greens completely. Halve cherry tomatoes, dice cucumber, shred carrots or slice bell peppers thinly. Thinly slice red onion and crumble cheese if using.
  3.
